Stir Fry Miso Chicken


This is one of the simple dishes I cook for dinner in the weekend.  There was once my colleague told me that Miso paste is similar to Chinese bean paste.  And I recalled my aunt used to cook chicken with Chinese bean paste.  So I tried it out.  It turned out just great.

Stir Fry Miso Chicken
Ingredients:
1 piece of chicken breast, cut into bite size
1 yellow onion, shredded
1 tsp minced garlic
2 tbsp cooking oil
2 tsp of corn flour mixed with 2 tbsp of water in a bowl

To marinate the chicken
1 tbsp of garlic paste/ juice
½ tsp of light soy sauce
½ tsp of corn flour

Sauce for cooking (mix well in a bowl)
½ cup water
1 tbsp of Miso paste
1 tsp light soy sauce
1 tsp of sugar

Method:
1. Marinate chicken at least 2 hours before cooking.
2. Heat oil. Add minced garlic, then add chicken and cook. Stirring occasionally, about 3 minutes.
3. Add yellow onion, follow by sauce. Let simmer for 2 minutes.
4. Add in corn flour mixture to make it thicken.
5. Serve with hot rice.
