Old-Fashioned Sardines Sandwich


When I saw Sonia shared her post on Old-Fashioned party cake and food the other day, it brings back lots of sweet memories on the birthday celebrations I had when I was young.  One of the favourite food we always prepared is Sardines sandwich (canned mackerel in tomato sauce).  This is because we do not know how to manipulate stove or oven in those days.  So, we will let the parents do the cooking, and we will make our favourite sandwich.

The preparation is simple:
1. open a canned of sardines, smash the sardines in a bowl using fork until you have a coarse paste
2. spread one slice of the bread with butter and another slice with mayonnaise
3. place the sardines paste on a bread and top it with sliced cucumber
4. cut bread into triangles and serve
